I completely understand how challenging it can be to find healthy dessert options while transitioning to a more plant-based lifestyle. That's why I decided to incorporate more fruit into my diet during dessert, and I'm glad I did! However, I know that sometimes, fruit alone isn't enough to satisfy that sweet tooth. That's why I'm excited to share an amazing recipe I stumbled across on Facebook. It was shared by vegan influencer Jen Jones, and let me tell you, it's a game-changer! I let my kids and husband taste it with strawberries, and they absolutely loved it. This recipe is super quick to make and perfect to keep on hand for those days you are craving something sweet. Plant-Based Caramel
1 Cup of dates If they are not pitted remove the seeds (I used the whole 12 oz container
½ Cup Full fat coconut milk (I also tired it with light coconut milk to cut the calories it worked great)
1 Tbls Vanilla (I added two to mine because I love vanilla)
1 Pinch of salt
Makes 12oz
1. To prepare the dates, boil water and soak your dates in the hot water for 10 minutes.
2. Add all the ingredients to a blender or food processor (I used my magic blender) and blend until the mixture is smooth.
You can use this recipe in various ways like adding it to your oatmeal in the morning with some cinnamon or using it as a dip for your fruit. The possibilities are endless!
